I have seen so many healthy versions of Eggplant Parmesan and didn’t consider writing about mine until I realized even the healthy versions had many more calories than necessary. I found recipes that listed calories close to mine but for portions of 5 ounces. Other recipes with portion sizes of about 1 cup had from 300 to almost 500 calories. I don’t miss the oil and breading. So here is my simple quick version:
Eggplant Parmesan
Serves 3 to 4 generously
1 eggplant
3/4 cup marinara sauce
1/2 cup onion
3 tbsp Parmesan
2 oz mozzarella
Cut eggplant in 1/2 inch cubes and place in an 8×10 baking dish. Top with chopped onion. I use jar marinara sauce, pour 3/4 cup over the eggplant and bake at 375 degrees for 35 minutes. Remove from oven and top with Parmesan and mozzarella.
