Vegan From Aries: The Mystery Is Squashed

If any of you guessed cherry tomatoes you’d be wrong. But kind of right. You would have outsmarted me since I just realized that this could have been an answer – just not the one I had in mind. What I was thinking of was….

Here is your prize – the recipe to this fresh simple summery dish – a cold spaghetti squash salad with wilted arugula, pops of cherry tomato, dill and mint, and strands of zucchini and asparagus spritzed with olive oil infused with roasted garlic and lemon.(full recipe at the bottom of this post)

Now let me set the scene…..

The occasion: My godfather’s son was celebrating his 3rd birthday.

The setting: A small backyard ending on the water, filled with hungry, sweaty Greeks of all ages.

The grill was filled with hotdogs and hamburgers and chicken and meat skewers and the rest of the farm, while a simple salad, corn on the cob, asparagus, and dolmades sat inside on the birthday buffet. This was not a segregated party though, meat on the outside veggies on the inside, as my family had me covered on the grilling front. The chef’s wife was among the guests so the option of veggie Boca burgers was also on the table for us – a lone vegetarian and a lone vegan – and anyone who just wanted something different.

As you all know, I am neutral on Vegan, Vegetarian or animal proteins. It is difficult to get essential amino acids without complete proteins in milk, cheese, eggs, or meat. I don’t eat meat because I don’t digest it well.

No matter what your feelings about Vegan or eating meats, for healthy eating, vegetables are the main part of the diet. No one does vegetables better than vegans.

Some people feel strongly about not eating meat. If you don’t eat animal proteins, know how to stay healthy. I will be posting links and re-posting articles to sites that have vegan information.

It’s not up to me to tell anyone what to believe about food, only to give information to stay healthy.
